What's on the Menu? A Review of the Energy and Nutritional Content of U.S. Chain Restaurant Menus

Helen Wu, a RAND assistant policy analyst, discusses a RAND study that looked at over 300,000 menu items in 245 restaurants. The study, which is the largest ever on chain restaurant nutrition and started as dissertation research by Wu as a student at the Pardee RAND Graduate School, found that 96 percent of restaurant items exceeded USDA recommendations.
